Three delicious quinoa recipes

Quinoa is a nutrient-rich food, and while most people don't really know anything about it, it was voted one of the world’s healthiest foods by dietitians. It is an excellent gluten-free source of protein, iron and fiber. The preparation is easy. Here are three delicious recipes you can try immediately:

Quinoa Vegetable Salad. This is a very light and delicious dish that will give you every nutrient you need. In a hot pan,heat some olive or canola oil and cook some minced garlic and about 1/4 cup of chopped onion for about 5 minutes. Pour in a cup of water, a pinch of salt and black pepper, and bring it to a boil. Add the quinoa and turn the head to medium low, and let it simmer until the quinoa turns soft - for about 20 minutes with the lid on. After 20 minutes, remove it and drain the water. Let the mixture cool. Place some chopped tomato, carrots, bell pepper and cucumber in a bowl. The quantities are your choice. Place the chilled quinoa in and mix. Seasoning with some salt and black pepper, cilantro and mint. Drizzle some olive oil and stir until well mixed.


Mexican Quinoa. This is one of the easiest recipes and it's full of delicious flavours that combine so well together. Mix quinoa, kindey and pinto beans, corn, red bell pepper,red onion,brown rice and cilantro into a container with a lid. Wisk some olive oil, vinegar, salt, garlic, black pepper, chili powder and cayenne pepper together in a bowl and pour it over the quinoa. Put the lid on and let it sit in the fridge for at least 2 hours, or until the flavours blend together. Stir  before you serve it.


Mango Quinoa. This exotic recipe brings in flavours from many cultures and providing a whole new level of deliciousness. Add some cooked quinoa in a bowl with mango, cucumber, red pepper and onions. Mix everything well. For the dressing: in a blender, place some olive oil, vinegar, black pepper, chutney, mustard, ginger, and curry and blend everything together. Drizzle over the quinoa and mix well. Serve this over some spinach.
