Easy Shrimp & Tomato Salad Recipe

For people who almost refrain from heavy cuisines, salads remain the best options. If you want to try a simple meal that has the freshness of veggies and the goodness of sea food, then you can’t go wrong with shrimp and tomato. Go ahead and see how you can combine both these ingredients into a lovely summer light meal.

Ingredients:

●Chopped onions
●Minced garlic
●Jalapeno pepper paste
●Lemon juice and zest
●Basil leaves
●Salt & pepper
●Olive oil
●Cooked shrimp
●Heirloom tomatoes
●Goat cheese
●Baby spinach or watercress

Directions:

●In a large bowl, mix onions, lemon zest, baby spinach, diced heirloom tomatoes.
●In a small bowl, salt, mix olive oil, minced garlic, lemon juice and jalapeno pepper paste to make a dressing. You can also De-vein and roast the pepper to make a paste.
●Add the dressing to the large bowl with all the other ingredients. Add goat cheese and chopped basil leaves to the salad.
●Always add shrimp in the end when you want to serve the salad.
●Drizzle a good amount of olive oil to add glossiness to the salad. Serve cold.

This is an excellent way to replace heavy meals. This salad offers the all ingredients from land and sea and you get to enjoy a great amount of flavors and texture in one single bowl. Try this light and easy salad for your dinner in summers!
